A simple yet delicious veggie stir fry featuring a reduction using our Superseed Superfood Almond Butter! Take your vegetables to the next level by incorporating our dressing for a thai like taste minus the peanuts!
3 cups broccoli florets
2 carrots, peeled
3/4 cup of canned chickpeas, drained
2 Tbsp sesame seeds
1/4 cup extra virgin olive oil
1 tsp soy sauce (for gluten free use tamari sauce)
1 1/2 Tbsp fresh lemon juice
1/4 tsp garlic powder
pinch of salt
3 Tbsp Superseed SMÜTH Superfood Almond Butter
Preheat oven to 400F.
Prepare dressing by mixing all ingredients in a bowl. Set aside.
Cut carrots into coins, about 1/2 inch thick.
Add carrots, broccoli and chickpeas to an oven tray and drizzle with olive oil. Season with salt and pepper.
Roast chickpeas and vegetables for 25 minutes. Flip vegetables halfway to ensure an even roast.
Transfer to a serving bowl and drizzle with the Superseeds dressing. Top with sesame seeds.
