RECIPE: Maqui & Açai Oatmeal Pancakes

We love making pancakes. They are easy, convenient and super satisfying when your are craving something wholesome and sweet. Stack them on top of each other while layering with our Maqui & Açai Superfood Almond Butter for added protein and sweet kick.


  • 1 1/2 cups of oat flour

  • 1 1/4 cups of coconut milk

  • 1 egg

  • 2 Tbsp ghee + additional for cooking

  • 3 1/2 tsp baking powder

  • 1 Tbsp coconut sugar

  • 1 tsp salt

  • 1/4 cup of raspberries

  • 1 bunch of dried cranberries

  • 1 bunch of nuts

  • 3 Tbsp of Maqui & Açai SMÜTH Superfood Almond Butter


  1. In a bowl, sift the oat flour, baking powder, salt and sugar.

  2. Add ghee to bowl and break it down with a fork until well incorporated.

  3. Add milk and egg and mix until there are no lumps.

  4. Melt a teaspoon of ghee in a pan over medium heat. Pour 1/4 cup of the batter forming a pancake. Once batter begins to bubble, flip pancake over and cook for an additional 2-3 minutes or until golden.

  5. Repeat until all the batter has been used.

  6. Stack pancakes, drizzle with Maqui & Açai Superfood Almond Butter and top with nuts, cranberries and raspberries.
